One of the staple hard cheeses in our house is Flagship, made here in Seattle by Beecher’s Handmade Cheese in Pike Place Market. Brooke uses it in her Mac & Cheese, and it makes an amazing grilled cheese sandwich. Well, today, we tried another of Beecher’s varieties, Marco Polo, which is studded with green and black peppercorns, and I might have a new favorite!
Here it is paired with a delicious heirloom tomato for a perfect grilled cheese.
